Banana Muffin Recipe

Baking is one of my favorite things to do around the holidays. I love baking with Christmas music playing in the background (check out my Spotify Christmas playlist at the bottom of the post) and the smell of whatever I'm baking in the oven, the Christmas tree lights in the background, and the fire heating up the house. I just love everything about it! On some days I like to have brownies or cookies waiting for my fiancé Ryan when he gets home from work as a fun little surprise. We try to eat as good as possible this time of year but we also believe in balance and we can't pass on every delicious treat that comes our way. I was about to start baking something when I thought about all the bad treats enticing us these days and what I could bake that wouldn't be so horrible for us. I have made a different version of these muffins before but thought I would trade in some of the ingredients for healthier options and also just use whatever ingredients I already had laying around at our house. I also thought these would be the perfect quick breakfast option, you can take a couple with you when you head out the door for work in the morning especially on those mornings that are so cold you choose to spend those extra couple of minutes snuggling in bed and as a result forcing you to rush out the door. Ingredients:

4 Bananas

1 cup packed light-brown sugar

1/2 cup Canola Oil

1 large egg

1 cup whole wheat flour

1 cup kodiak mix

(optional) 1 scoop of protein I use Perfect Fit Protein to bake with

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 cup sour cream I substitute it with 1/2 cup of plain greek yogurt either will do

1tbs pure vanilla extract

Baking Time: 25-30 min

Preheat oven to 350 degrees, line a muffin pan with cupcake liners and get the rest of your baking supplies together.

Next start by peeling 4 bananas and put them into a kitchen aid or a mixing bowl and use a hand blender. With this step it's best to use ripe bananas but any bananas will do. Blend until mashed.

Next add in your brown sugar

Add in your oil

Add in your egg

Blend until smooth, It should look like the picture below when finished blending.

Next add in flour, kodiak mix and optional protein powder.

Add in baking powder, baking sugar and salt.

Mix until smooth, Next add sour cream OR plain greek yogurt.

Add in vanilla.

Blend until everything is combined, it should look like the picture below after fully blending.

For the next step I use a large spoon to pour the batter into the muffin tins. Fill about 3/4 of the way full.

Bake for about 25-30 min or until the toothpick inserted into the center of the muffin comes out clean.

Once they are finished baking, take them out and place onto a baking rack to cool. ENJOY!
